Cropwell Bishop Blue Stilton has a rich tangy flavour and a velvety-soft texture that makes it melt in the mouth. Cropwell Bishop craft this cheese carefully by hand, using methods that have changed little since the 17th Century. To allow this Stilton to develop its unique flavour, the rich and creamy stilton is typically rubbed with salt mid-process and aged for 12 weeks to mature
The proof of the artisanal quality is in the fact that this is a multiple award-winning cheese. Supreme Champion of the World-renowned Nantwich International Cheese Show in 2009 and more recently Supreme Champion Cheese at the 2016 Great Yorkshire Show.
The Blue Stilton Cheese PDO (Protected Designation of Origin) means that it can only be made within the English Counties of Derbyshire, Nottinghamshire and Leicestershire from locally produced milk, pasteurised before use. Stilton can also only be made in a cylindrical shape, should never be pressed and can be allowed to form its own coat or crust.
Cropwell Bishop has been making Blue Stilton since the 1920s (when they were called Somerset Creameries) and is now only one of six dairies able to produce authentic Stilton under the PDO.
As with other blue cheeses, Penicillium Roqueforti blue mould is added to the milk. This is activated once the cheese has formed by piercing with sterile needles. This allows air to enter the body of the cheese, developing the characteristic blue veining in the open texture.
Cropwell Bishop Blue Stilton is a genuine classic and tastes delicious with fresh, crusty bread, with any sweet chutney or jam, honey, pears and walnuts, regular cracker or biscuit. Try pairing the cheese with drinks such as Pudding wine, Port, Dry sherry, or a full-bodied red wine for a great combination.
