The heart of the agave is slowly cooked and melted in a pressure cooker, then cooled and transported to a factory where to mill to extract the agave juice. The ingredients are then sent to a fermentation tank, where the agave juice ferments thanks to natural yeast. After one distillation, you get Pulque, which is normal, and a second distillation you get Mezcal, which is more alcohol and better quality. In the finished product area, each bottle of Mezcal is carefully vetted before being packaged and stored for selling at home and abroad.
